Picanha is a uniquely flavorful cut prized for its rich beefy taste and signature fat cap and when cooked correctly, it’s unbelievably tender and juicy. While often underestimated, this cut shines with the right approach and is a favorite for high-heat grilling.
Best way to cook:
Picanha loves hot and fast cooking. Sear over high heat (grill or cast iron), starting fat-cap-side down to render the fat, then flip briefly to finish. For best results, cook to medium-rare or medium, rest well, and always slice against the grain for maximum tenderness.
Because thickness can vary, thinner steaks cook very quickly keeping an eye on doneness is key.
