Ingredients

2 TCC Picanha Steaks

Kosher salt

Metal Skewer

1/2 cup olive oil

1/4 cup red wine vinegar

2 T fresh lemon juice
-
1/2 cup parsley
-
1/2 cup cilantro
-
2 T fresh oregano
-
1/8 t red pepper flakes
-
Salt and pepper to taste
Chimichurri Sauce
Directions
Preheat gas grill or grill pan on medium high heat
Bend picanha steaks into c shapes and skewer both onto a metal skewer
In a blender or food processor add all ingredients for chimichurri sauce and pulse until all incorporated at the texture you want. Place in bowl and set in fridge
Season meat with kosher salt and place on grill
Flip skewer every 3-4 minutes to get grill marks on all sides of the meat
Pull off grill when internal temp reads 125-130 degrees F.
Rest meat for 10 minutes
To serve, thinly slice meat directly off the skewer, top with chimmichurri and serve with your favorite sides
