Easy & Flavorful Egg Roll in a Bowl

Ingredients

1 lb. TCC ground beef

1 tbsp sesame oil

1 small onion, diced

2 cloves garlic, minced

1 tbsp fresh ginger, grated (or 1 tsp ground ginger)

1 (14 oz) bag coleslaw mix (shredded cabbage & carrots)

ΒΌ cup soy sauce (or coconut aminos for gluten-free)

1 tbsp rice vinegar
-
1 tsp Sriracha or red pepper flakes (optional, for heat)

1 tsp toasted sesame seeds (optional, for garnish)

2 green onions, sliced (for garnish)
Directions
Heat sesame oil in a large skillet or wok over medium-high heat.
Add TCC ground beef and cook until browned, breaking it apart as it cooks.
Drain excess fat if needed.
Add diced onion and cook for 2-3 minutes until softened.
Stir in garlic and ginger, cooking for another 30 seconds until fragrant.
Stir in the coleslaw mix, soy sauce, rice vinegar, and sriracha (if using).
Cook for about 5 minutes, stirring occasionally, until the cabbage softens but still has a slight crunch.
Remove from heat and top with green onions and toasted sesame seeds.
Serve as is, or over cauliflower rice, jasmine rice, or in lettuce wraps.
