Ingredients
- 2 TCC beef cheeks
- Salt and pepper to taste
- 2 T oil
- 1 yellow onion diced
- 1 T beef base
- 1 C water
- 3 chipotle peppers in adobo
- Juice from 1 lime
- 1/3 Cup apple cider vinegar
- 2 t. Mexican oregano
- Salt and pepper to taste
- 1 t. Cumin
- 5 cloves garlic
- 1 T beef base
- 1 Cup Water
Beef Cheeks
Sauce
Directions
Put all ingredients for sauce in a blender until smooth
Turn Instant Pot on sauté
Season both sides of beef cheeks with salt and pepper
Add oil to Instant Pot and sear beef cheeks for a few minutes per side
Take beef cheeks out of pan
Add in onion and sauté until translucent
Add in beef base and water to deglaze the pot
Put beef cheeks and sauce back in the pot, secure lid on and set for 60 minutes
When time is up manually release the pressure and shred the meat
Serve meat in tacos with your favorite toppings
