Ingredients

2 lbs. TCC ground beef

2 tbsp olive oil

1 small onion, diced

1 ½ cups frozen peas and carrots mix
- 1 C frozen corn

2 cloves garlic, minced

1 tbsp tomato paste
-
1 tsp Worcestershire sauce

1 cup dry red wine or beef broth
- Salt & pepper to taste

2 lbs. baby Yukon gold or red potatoes

4 tbsp butter
-
½ cup whole milk (or heavy cream)

Salt & pepper to taste
Directions
Boil potatoes in salted water until tender, about 15-20 minutes.
Drain and mash with butter, milk, and salt
Heat olive oil in a skillet over medium heat. Sauté the diced onion until soft, about 3-4 minutes.
Add garlic and cook for another minute.
Brown the ground beef, breaking it apart as it cooks. Drain excess fat if needed.
Stir in tomato paste, Worcestershire sauce, salt and pepper.
Pour in the red wine or beef broth and let it reduce by half, about 5 minutes.
Stir in frozen peas and carrots and corn and let them cook for another 2-3 minutes.
Preheat oven to 400°F (200°C).
Spread the meat mixture evenly in a baking dish.
Spoon the mashed potatoes over the meat, smoothing it out. Use a fork to create texture.
Bake for 20-25 minutes until golden brown. For a crispy top, broil for 2-3 minutes at the end.
Let it rest for 5 minutes before serving.
