2 lbs. TCC ground beef

½ cup crushed pork rinds

½ cup grated Parmesan cheese

2 large eggs

¼ cup heavy cream
-
1 tsp onion powder
-
2 cloves garlic, minced
-
1 tbsp Worcestershire sauce

1 tbsp Italian seasoning
-
1 tsp salt
-
½ tsp black pepper
Topping Ingredients

½ cup sugar-free ketchup
Directions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
In a large bowl, combine ground beef, crushed pork rinds, Parmesan, eggs, heavy cream, onion powder, garlic, Worcestershire sauce, Italian seasoning, salt, and black pepper.
Mix gently until just combined—don’t overwork the meat.
Form the mixture into a loaf shape on the prepared baking sheet.
Place in the oven and bake for 45-50 minutes, or until the internal temperature reaches 150°F (65°C).
Remove the meatloaf from the oven and spread the sugar-free ketchup evenly over the top.
Return to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing.
