2 lbs. TCC ground beef (80/20 for best flavor)

1 packet (about 1 oz) French onion soup mix

1 cup caramelized onions (about 2 medium onions, cooked down)

½ cup breadcrumbs (panko or regular)

½ cup shredded Swiss cheese

2 large eggs
-
¼ cup beef broth
-
1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp black pepper
Topping Ingredients
- ½ cup caramelized onions (extra from above)

½ cup shredded Swiss cheese
Directions
Thinly slice 2 medium onions.
In a skillet over medium-low heat, melt 2 tbsp butter and add the onions.
Cook slowly, stirring occasionally, for 25-30 minutes until deep golden brown.
Deglaze with a splash of beef broth and cook another 5 minutes.
Remove from heat and set aside.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, mix ground beef, French onion soup mix, 1 cup caramelized onions, breadcrumbs, Swiss cheese, eggs, beef broth, Worcestershire sauce, garlic powder, and black pepper.
Gently mix until just combined—don’t overwork the meat.
Form the mixture into a loaf shape on the baking sheet.
Bake for 45-50 minutes, or until the internal temperature reaches 150°F (65°C).
Remove from the oven and spoon the remaining caramelized onions on top.
Sprinkle with shredded Swiss cheese
Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly, and the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing.
