Ingredients

6-8 pieces of TCC Oxtail
- 2 T olive oil
- Salt and pepper to taste
- 1 diced yellow onion
- 3 cloves crushed garlic
- 1 C dry red wine
- 2 C beef stock
- 1 Sprig thyme
- 1 bay leaf
Directions
Heat oil in Dutch oven on the stove on medium high heat
When oil is hot sear the oxtail on all sides and season with salt and pepper
When the oxtail is all golden-brown remove from pan
In same pan put onions in and cook until translucent
Add garlic and cook about a minute until fragrant
Add oxtails back into pan and pour all the other ingredients in
Put the lid on and place in the oven at 325 degrees F
Cook for 1.5- 2 hours until oxtails are tender with fork
Serve with rice and beans
