Ingredients

1 TCC Beef tongue
- 1 Bay leaf
- 1 T peppercorns
- 1 sliced yellow onion
- 2 T beef broth base
- 3 C water

2 T melted beef tallow or olive oil if you don’t have tallow
- Salt and pepper to taste
- Corn tortillas
- Lime wedges
- Chopped yellow onion
- Chopped cilantro
- Salsa or hot sauce
Directions
Place all ingredients in a slow cooker and cook on low 6-8 hrs until fork slides in easily
Place tongue on a cutting board and let it rest for 10 minutes or so until it can be handled
Peel away the outer layer and dice meat into small pieces
Place tallow in a saute pan on the stove on medium high heat
When pan is hot put the diced meat in season with salt and pepper and fry for 3-5 minutes until outside is crispy
Place tortillas on a dry pan until warmed and slightly crispy
Top tortillas with beef tongue and the other toppings and enjoy
