Ingredients

2-3 lbs. TCC beef bones (marrow bones, knuckle bones)

1 onion, quartered

2 carrots, roughly chopped

2 celery stalks, roughly chopped

5-6 garlic cloves

2 bay leaves
-
10-12 whole peppercorns

8-10 cups water (enough to cover the bones)

Directions
Roast the Bones and vegetables
Preheat your oven to 400°F Place the bones and vegetables and garlic on a baking sheet and roast for about 25-30 minutes until browned. This step adds more depth of flavor to your broth.
Prepare the Instant Pot
Add the roasted bones and vegetables, bay leaves, and peppercorns to the Instant Pot.
Pour in enough water to cover the bones and vegetables, but do not exceed the “Max Fill” line of your Instant Pot.
Secure the lid and set the valve to “Sealing.” Select the “Pressure Cook” or “Manual” setting and set the time to 120 minutes (2 hours) on high pressure.
Once the cooking time is complete, let the pressure naturally release, which may take about 30 minutes.
Carefully remove the lid, and using a fine mesh strainer or cheesecloth, strain the broth into a large bowl or container to remove the solids (bones and vegetables).
Let the broth cool, then skim off any fat that rises to the top if desired. Store in the fridge for up to 5 days or freeze for up to 6 months.
Tips
You can repeat the process with the same bones to extract even more nutrients for a second batch.
You can add apple cider vinegar to help draw the minerals from the bones into the broth.
The broth can gel once cooled, which indicates a high collagen content—great for joint health!
