Your taste buds are in for a treat as we present a meticulously crafted, farm-to-table feast. Every dish is an homage to the ranching tradition, spotlighting locally sourced, tender cuts of beef that epitomize the dedication and passion of the Thomas Cattle Company ranch teams. Each bite tells a story, a journey from pasture to plate, the spirit of the land infused into every morsel with local flavor.

First Course paired with a 2022 Pinot Grigiot
Grilled street taco (Sirloin Flap) finished with roasted Poblano puree', blistered corn, cilantro, onions, cotija and lime.

Second Course paired with a Malbec

Korean style short ribs (marinated in Lees) served with chilled peanut noodle salad, marinated vegetables and Mizuna.

Third Course paired with a 2020 Merlot

Braised Chuck roast served with smashed potatoes and grilled carrots.

Fourth Course paired with a Chardonnay Reserve

Tallow and butter biscuits, macerated fruit with Chantilly cream.
